Traditional Mole Sauce recipe

A nice version of the traditional Mexican sauce that is good on a variety of dishes.

Ingredients
4 1/2 cups chicken broth
3 tablespoons olive oil
1 cup finely chopped onion
3 tablespoons chopped garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
2 1/2 tablespoons chili powder
3 tablespoons all-purpose flour
2 ounces dark chocolate, chopped

Directions:

  • Heat oil in a large saucepan over medium low heat
  • Add onion, garlic, oregano, cumin and cinnamon.
  • Cover and cook until onion is almost tender, stirring occasionally, about 10 minutes.
  • Mix in chili powder and flour, stir for 3 minutes.
  • Gradually whisk in chicken broth.
  • Increase heat to medium high.
  • Boil until reduced, about 35 minutes, stirring occasionally.
  • Remove from heat.
  • Whisk in chocolate; season with salt and pepper, if desired.
  • Options:

    Double the amount of chili powder
    Use a good quality dark chocolate. Sweeter chocolates like Hershey will throw the taste of the recipe off
    Substitute vegetable broth for the chicken broth for a vegetarian version

    I came across this blog post about an informal survey of dog owners that finds Dachshunds to be the most aggressive towards humans of all the breeds surveyed. Pit Bulls were eight on the list interesting enough, which flies in the face of that fact that “everyone” knows Pit Bulls are the most dangerous dog around.

    San Francisco Pictures, Alcatraz and Golden Gate

    When I was in Oakland recently, I took the ferry across the bay to San Francisco. As it was still early, and not quite tourist season yet, I was able to get a ticket to Alcatraz.

    As I was so early, I was able to go on the garden tour which was pretty awesome.

    After nearly an hour on the Garden Tour, I finally got pictures of the most magnificent site in the city; The Golden Gate Bridge.
