Traditional Mole Sauce recipe

A nice version of the traditional Mexican sauce that is good on a variety of dishes.

Ingredients
4 1/2 cups chicken broth
3 tablespoons olive oil
1 cup finely chopped onion
3 tablespoons chopped garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
2 1/2 tablespoons chili powder
3 tablespoons all-purpose flour
2 ounces dark chocolate, chopped

Directions:

  • Heat oil in a large saucepan over medium low heat
  • Add onion, garlic, oregano, cumin and cinnamon.
  • Cover and cook until onion is almost tender, stirring occasionally, about 10 minutes.
  • Mix in chili powder and flour, stir for 3 minutes.
  • Gradually whisk in chicken broth.
  • Increase heat to medium high.
  • Boil until reduced, about 35 minutes, stirring occasionally.
  • Remove from heat.
  • Whisk in chocolate; season with salt and pepper, if desired.
  • Options:

    Double the amount of chili powder
    Use a good quality dark chocolate. Sweeter chocolates like Hershey will throw the taste of the recipe off
    Substitute vegetable broth for the chicken broth for a vegetarian version

    Fulio’s is not your typical Italian place. It’s a bit of a hole in the wall location. You can easily walk by and not notice it. But inside is has a very nice atmosphere.

    They have a nice wine selection and an amply stocked bar. Where Fulio’s shines though is that their food is not the same as every other Italian place in the world. They have some real innovative items on the menu. My personal favorite is sausage with noodles in a mustard cream sauce.

    Another good option is almost the same dish, but with tomato cream sauce with no meat. Other options are on the menu, including several original salads and best of all, an ample selection for the vegetarians. Which is amazing in itself considering Astoria qualifies as a small town.

    This place is so good that we’ve driven to Astoria several times just for the food and I never go through Astoria without stopping here.

    Bacon Wraps Recipe

    Bacon Wraps Recipe

    This is a great appetizer, party snack, or hor d’oeuvres

    Box of Toothpicks
    1 Pound of Bacon, thick sliced is best
    2 cans of Water Chestnuts
    Thick Teriyaki Sauce*

    Cut each piece of bacon in half. Wrap one piece around a water chestnut and secure with a toothpick. Place in bowl of teriyaki sauce, be sure to turn every once in a while so that it’s fully coated. Repeat until bacon and waterchestnuts are gone. Place on a cookie sheet covered with foil and bake at 350 for about 15 minutes. The bacon should look cooked and be fairly stiff.

    Serve as finger foods with teriyaki sauce as a side dip.

    Alternatives:
    Substitute flavored soy sauces or other thick sauces such as BBQ sauces. Asian inspired flavors work best.

    Thinner cut bacon can be used, but can be overpowered by the sauce and the chestnuts. If you go this route, be sure to reduce the cooking time to ten minutes and don’t soak in the sauce.

    *Or Teriyaki Glaze. Thinner teriyaki sauces can be used, but you’ll want to let them soak for a while longer.
